BANANA & PARSLEY SMOOTHIE
1 banana
1/2 cup chopped parsley
1 cup almond milk
GREEK YOGURT & FRESH FRUIT
Banana, Goji Berries, Blackberries, Shredded Coconut
RAW NATTO DONBURI
To make the raw “rice”:
1 cup soaked cashews
1/2 teaspoon celtic salt
1 1/2 cups peeled and diced turnips or daikon radish
1 1/2 finely chopped cauliflower head
Chop, chop, chop everything into small pieces! Or use food processor.
PICKLED VEGETABLES
1 cup water
1 cup brown rice vinegar
3-4 bay leaves
2 tablespoons salt
1/3 cup of sugar
Bring mixture to a boil and simmer for 5 minutes, let cool, then add to chopped veggies. Wait 3 days before eating.
Vegetables to pickle: cauliflower, garlic, cabbage, turnips, radish, beets, broccoli stems, and more. Red cabbage or beets will get you that pretty pink color!
AVOCADO SALAD
1 ripe avocado
1/4 cup chopped celery
1/4 cup chopped apple
1/8 cup chopped red or yellow sweet onion
kosher salt to taste
RAW CASHEW MAYO
1/2 cup soaked cashews (soak for 3-6 hrs in water then drain the water)
1/4 cup water
1 lime juice (or lemon although lime’s better)
2 tablespoon olive oil
1 pinch of kosher salt
1 teaspoon (fruit) vinegar
1 teaspoon sugar (or honey for non-vegan)
Add everything and mix all in blender.
ASIAN SPINACH SALAD
3 oz spinach (about 3 handfuls)
1 tangerine (peeled)
10 cherry tomatoes (more or less)
1 oz pea shoots (optional, or substitute with watercress sprouts/green bean sprouts)
Toss everything together in a large bowl with 2 tablespoons of extra virgin olive oil, and a dash of kosher salt.
Simple Peanut Sauce
1 part peanut butter (you can make your own raw, but I just used regular)
1 part honey
1 part lemon juice
1 part drinking water
Mix thoroughly until the clumps are gone.
KALE & GRAPEFRUIT SALAD
3 oz kale leaves (about 3 handfuls)
1/2 a grapefruit (peeled)
1 cup shredded red cabbage
Squeeze one slice of grapefruit juice into salad and toss everything together in a large bowl with 2 tablespoons of extra virgin olive oil, and a dash of kosher salt.
APPLE CHIPS
On your lowest oven setting (200F or lower) bake thinly sliced apples for 2-3 hours until crisp.
